This Recipe the "Pan Sobao" is known mostly in the north east of the island. For us born in the west, "Pan de Manteca" is what the local bakeries sell.
"Sobao" bread, is well recognize by the smooth texture, softness and it's sweet flavor. On the contrary with "Manteca" Lard bread, this is a more buttery, savory and a little crunchier texture; Do not confuse "Manteca" bread with water bread. Water bread as the name imply, the dominant ingredient in the recipe is water, for this reason, the moisture content will dissapear, and the bread becomes solid as a rock.
